Gena is a genealogist and author of the book \u201cFrom the Family Kitchen.\u201d<\/em><\/p>\n<p>Recently I gave a presentation on food history and family history. Credit: Gena Philibert-Ortega.<\/figcaption><\/figure>\n<p>One of the participants asked me what my name for that dish was. I answered by asking him what he called that dish. Why? Depending on where you grew up or where your family is from, you may have a different recipe name for this combination of ground beef, elbow macaroni, and tomato sauce then I do.<\/p>\n<p><strong>Anyone for American Chop Suey?<\/strong><\/p>\n<p>Growing up, my mom made a dish called Soupy Macaroni. I thought that no one else ate this dish and that it was something that my mom invented. But I was wrong. This dish is very familiar to lots of people, but we don\u2019t all call it by the same name. In fact, it seems \u2013 despite some of the foreign names it\u2019s called \u2013 it\u2019s actually more American than apple pie.<\/p>\n<p>It\u2019s probably obvious to you that there are regional food differences. But in some cases, those food differences may not be so much about a different type of food than a variation on a theme. You may go to a restaurant in a different state and that restaurant could serve dishes you are familiar with, but call them something completely different.<\/p>\n<p>A good example of this was the time I was visiting my grandmother in Arizona and my cousin asked me if I wanted to have a burro for dinner. The thought of eating a small horse-like creature resulted in my becoming extremely anxious, only to later relax when I realized she was serving the very familiar-to-me meal of burritos.<\/p>\n<p>Consider a pasta dish that combines macaroni, tomato sauce, and ground beef. In some cases, there might be additional ingredients such as onions, garlic, cheese or green bell peppers. What did your family call this dish?<\/p>\n<p>Depending on where you live, your name for this common recipe might be different than my mom\u2019s \u201cSoupy Macaroni.\u201d People from the New England states call it American Chop Suey. Those from the Midwest call it Goulash or American Goulash.<\/p>\n<p>Other names include:<\/p>\n<ul>\n<li>Macaroni Casserole<\/li>\n<li>Macaroni and Beef<\/li>\n<li>Beefaroni<\/li>\n<li>Chili Mac<\/li>\n<li>Johnny Martzetti (Ohio)<\/li>\n<li>Slumguillion<\/li>\n<\/ul>\n<p>It\u2019s easy to understand why this dish has been featured in school cafeterias and on family dinner tables. The ingredients are inexpensive and numerous variations of the dish exist, so the cook can customize it with any number of vegetables or other ingredients.<\/p>\n<p><strong>The Recipes<\/strong><\/p>\n<p>So now that you\u2019ve heard a little bit about American Chop Suey, are you ready to make some for dinner? Historical newspapers, such as those in GenealogyBank\u2019s <a href=\"https:\/\/www.genealogybank.com\/explore\/newspapers\/all?utm_source=social&utm_medium=blog&utm_campaign=SM_Blog_txtlnk_2014_00&s_referrer=social&s_siteloc=blog&s_trackval=SM_Blog_txtlnk_2014_00&kbid=69919&pq=1&prebuy=no&intver=&CCPRODCODE=\">Historical Newspaper Archives<\/a>, have the recipes.<\/p>\n<p>This 1935 recipe printed in the <em>Boston Herald<\/em> is from the Marjorie Mills Hour radio show, and this article from that broadcast not only gives a recipe for American Chop Suey, it also includes listeners\u2019 housekeeping and food tips \u2013 including one from Mrs. Hood of Athol who says to \u201cgive flavor to cream soups, especially cream of onion by melting a piece of cheese about the size of a walnut in the soup just before serving.\u201d This American Chop Suey recipe calls for multiple nondescript packages of noodles, canned tomatoes, grated American cheese, onion, chopped beef, celery, and chop suey sauce.<\/p>\n<figure id=\"attachment_60235\" aria-describedby=\"caption-attachment-60235\" style=\"width: 442px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/www.genealogybank.com\/doc\/newspapers\/image\/v2%3A1386BF60B4F67060%40GB3NEWS-13E7C20B950F406B%402427945-13E32F7FA6F48B92\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-60235\" src=\"https:\/\/www.genealogybank.com\/blog\/wp-content\/uploads\/2020\/07\/boston-herald-newspaper-0522-1935-macaroni-recipe.png\" alt=\"A recipe for American Chop Suey, Boston Herald newspaper article 22 May 1935\" width=\"442\" height=\"446\" srcset=\"https:\/\/www.genealogybank.com\/blog\/wp-content\/uploads\/2020\/07\/boston-herald-newspaper-0522-1935-macaroni-recipe.png 442w, https:\/\/www.genealogybank.com\/blog\/wp-content\/uploads\/2020\/07\/boston-herald-newspaper-0522-1935-macaroni-recipe-297x300.png 297w, https:\/\/www.genealogybank.com\/blog\/wp-content\/uploads\/2020\/07\/boston-herald-newspaper-0522-1935-macaroni-recipe-150x150.png 150w\" sizes=\"auto, (max-width: 442px) 100vw, 442px\" \/><\/a><figcaption id=\"caption-attachment-60235\" class=\"wp-caption-text\">Boston Herald (Boston, Massachusetts), 22 May 1935, page 12<\/figcaption><\/figure>\n<p>As I talked with friends about American Chop Suey and their versions, some commented that they used canned tomato soup instead of tomatoes or a tomato sauce. Oakes of 183 Feronia Way, Rutherford, New Jersey. Where did my mom get that name for this dish? I don\u2019t know and she doesn\u2019t remember. I found as I asked my friends about their versions that they sometimes had their own \u201cmade-up names\u201d for the dish. These names span the descriptive to the humorous like \u201cShipwreck,\u201d \u201cGlitch Goulash,\u201d and \u201cNoodle Muck.\u201d* I\u2019ve also had people describe this dish as something their parents made with whatever leftovers existed.<\/p>\n<p>So, what\u2019s your name for the dish that combines macaroni, ground beef, and tomatoes?
